Sai Iyengar, who is a chef cum Proprietor of Khanasutra, believes cooking is an “art”, an “aphorism” & goes beyond just being a “job”. She tried her hand in the kitchen when she was 8 years young & there has been no looking back ever since! Be it cooking for her loved ones or in a get together with friends, what started then has evolved to a goal to reach thousands of people who love to retain the “tradition” of “authenticity”.
Khanasutra Believes “Good Food Feeds The Soul”
With so many mixed cuisines under one roof at most restaurants & kitchens booming every two weeks in every nook & corner, the journey for Sai hasn’t been easy. The young entrepreneur heartily accepts that her menu evolved more than 20 times since its inception through tasting events, pop up lunches, market survey and the way items on the menu have trended.
Khanasutra’s niche delicacies from Tamilnadu that come directly from her Amma’s kitchen are hot-sellers. “Simple, Homely & Divine” read most of Khanasutra’s reviews. She believes in pairing offbeat combinations with main menus and offers an interesting fusion to not just tingle taste buds but kick away the monotony too! None of her preparations carry artificial emulsifiers, coloring or soda. Every single item on the menu is home-style-cooked.
The menu is an offshoot of her Amma’s recipes, experiments & accidental inclusions she stumbled on while rustling up a grub for herself. Puri, which is otherwise paired with Sagu or Bhaji is served with tomato Gojju in Khanasutra.
Other signature dishes, hot sellers and must try’s include Kuzhi Panyaram, Kothu Parota, masala adai, wheat dosai, butter masala rice, Podi dosai, Podi idli and more. Another hot selling section is “Tayir Sadams with a twist” – A variety of Curd rice accompanied with homemade pickle ranging from raw mango, grated cucumber, fried tomato-onion & stir-fried eggplant. The meal section is complete “Tamilnadu” driven.
Recently, Khanasutra completed 1 year in the online space. While reminiscing the days of her struggle with the team of MetroSaga, Sai recalled how she started her journey by cooking for 10 people and now can cook 350 plates for an event. “It has, in every sense been, as backbreaking as rewarding,” she says. “No YouTube video or Google recipe teaches you to cook for 350 people. These things come with experience and I am humbled by this opportunity.”
Khanasutra Aims For Strong Brand Recall
Sai believes that consistent output, authenticity and unique customer experience will linger on & create an identity for Khanasutra in such a competitive market. While Khanasutra holds high philosophies in the food arena, the kitchen is also creating employment among destitute women. The kitchen also drives zero wastage as much as possible as a practice & when there is food left, it is distributed among lives who need it.
Sai has been involved with social causes for stray animals, destitute women & underprivileged children for more than two decades & in Khanasutra, by associating these women with her startup, she believes it is an extended philosophy of the way she leads her own life “Give to the World the best you have & the best will come back to you”. As we grow, she says, we will only expand with people who value, respect and need their jobs to the extent of remaining committed and taste conscious.
